Whether Google does or doesn't care about too long title is not an issue.
A title that is too long is not good for usability IMO and I believe what isn't good for usability is bad SEO as it can decrease engagement. Or do Google not care about that either I wonder?
I believe title (or a heading) is a short and concise description of the paragraph or text following. I think it's best to be economical but descriptive.
Are you saying they now show the full title in search results, however long the title is?

it will cut title & meta description to fit.
do you think if you put 65 symbols it will show your full title? you are sleeping as Joe Biden.
put 300 symbols 30-40 words in title, & search for the last 2-3 words, it will show the your web anyway
if you think title length matters now, I am afraid, but you are wrong. you have to admit it. nothing personal here.
must learn more about low & high frequency keywords & how they work, also long-tail keywords more efficient now,
unless your company is apple, in this case you can put just one high frequency word "Apple" in the title, check their title & correct me if I am wrong

It could easily remove some of it, but what is the point you are making? Google has the right to do so, but ideally you want you title to show as you intend it.

Some things just aren't worth our precious time. I've definitely been guilty of sinking hours into tasks that ultimately didn't move the needle. That little section at the bottom of the page highlighting what Google thinks we shouldn't focus on is a good reminder to keep our priorities straight.
It's kind of wild that titles technically have no character limit. You see those super long ones get truncated, but it's good to know there's no actual penalty or negative SEO impact for letting them run long.
