Vietnamese Ginger Chicken with Cashews...

Chicken Breast marinated in lime juice, fish sauce, ginger, garlic, tiny bit of raw sugar for several hours (not gallons of marinade, there should be no obvious liquid in the bowl, start with a small amount you can always add more if needed but you do not want the chicken dripping when you stir fry or it will start to stew instead)

Then quickly blast the chicken in a very hot wok - remove chicken and keep warm, then into the wok goes (in order give a little cooking time between each addition, stirring all the while)... Onion, Spring Onions (Scallions), Red Pepper, Garlic crushed, Julienne Ginger, hot red chillies cut into small dice or julienne, sliced ****ake mushrooms, Red pepper chunks, washed Baby spinach leaves, Corriander leaves (Cilantro), mint, - bung the chicken back in, taste, add a splash more fish sauce and or lime juice, or sugar, check seasoning and lastly top with cashew nuts.... black pepper and more chopped herbs.

Sorry forgot to get the presentation shot lol... here it is in production anyway.. it was really yum!!! I made enough for about 10 people lol, anyone hungry? :p

Well you can... Jump in the Tardis, set it back a few hours, and head on down!!! :p hehehe... actually nothing I have cooked in this thread is difficult, you can certainly make the above dish, it's pretty easy, so long as you have the ingredients all ready to go, and a good wok or saute pan :)
 
This was the best dish that we had for the night. The sliced fish was nicely fried, with a thin, crunchy outer layer wrapping all the moist, juicy, fresh fish meat. The brinjals were also fried to soft perfection! Coated with sweet, spicy darkened sauce. nomnomnom

You're welcome to attach images, in fact it's better that you attach the images than link them, just please keep them to reasonable web sizes :)
 
Spag Bol is ace, especially if there's some thick slices of garlic bread too, like Kier's the other day.

I'm in one of those moods today that I really can't be bothered with anything so I think it'll just be toast tonight, possibly beans on toast depending on whether the tins have a ring pull or not.
 
I had toast tonight but instead of plain or beans on toast I had something much, much better.

Vanilla ice-cream on toast... Oh yes.
 
It's really nice. The saltiness and hotness of the toast and butter goes well with the sweetness and coldness of the ice-cream.

Well it is not something I have tried, have had it on hot waffles though I suppose, not that much difference
