Here you go :

fried intestines coated with Nepali spices. For your eyes only, it was beautifully red, thanks to the generous amount of paprika-like seasoning. The intestines were rather tough, unfortunately. Tomatoes, onions and a squeeze of lime to add some flavours to the dish.

Ooooh, that sounds like it'd be great with the cooler Fall weather we are heading into (NE USA). Is that a recipe you'd be willing to share? :D

Apple Cinnamon Cake:

Apples:

Ingredients:
  • 4-5 large apples, peeled, cored, sliced - washed so they are damp
  • 2 tablespoons Sugar
  • 1 teaspoon cinnamon
In a large heavy bottom saucepan (or microwave safe cookware) add the apples, sugar and cinnamon, and gently steam either over a low heat on the stove top, or in the microwave until the apples are cooked but not at all mushy, and not much if any excess liquid is in the bottom of the pan.

Allow to cool.

Cake:

Pre-heat oven to 160°C - (320°F)

Organise a glass/pyrex dish to cook the cake in, no need to grease the pan if you are using glass, the cake is served from within the cooking vessel, not a turned out style of cake, more of a dessert style.

Ingredients:

  • 125gm (4.4 oz) Unsalted Butter - @ room temperature.
  • 3/4 cup Castor Sugar
  • 1 teaspoon Vanilla Extract
  • 2 Large Eggs
  • 1/2 teaspoon salt
  • 2 cups Self Raising Flour (or plain flour with appropriate amount of baking powder)
  • 2/3 cup of whole milk
In the bowl of a stand mixer, beat butter until soft and smooth, add sugar and cream them together until light and fluffy.

Add Vanilla and salt, then eggs one at a time, beating well between additions.

Turn the mixer down low, then add a third of the flour, mix gently, add half of the milk, mix gently, add another 3rd of the flour, mix gently, add the remaining milk, mix gently, then finally the last 3rd of flour.

In your glass baking ware, put a layer of cake mix on the bottom, then top that with your cooked and cooled apples, then finish with the remainder of the cake mixture.

Pop in the oven and bake for about 40 minutes, until it is golden brown on top, bounces back when you gently press the top and is cooked through.

Sprinkle the top with cinnamon sugar if you like, and serve warm with ice cream or cold in slices.

If I perfect an eggless cake I will make one just for you!
Speaking of eggs... I had a friend trying to make some homemade sauce. It called for 2 eggs. He thought it was too thick, and in the end added 6 eggs.

His girlfriend wasn't too happy with the end result. :ROFLMAO:
 
Thought I would show you a cake I just finished decorating for a birthday party we are going to today.. my first time making a "fondant" cake. It is pretty simple, and not as smooth as it could be, but overall I am not unhappy with the result :D Looking forward to doing some more now and practising my techniques a bit.

haha.. erm, something like that ;)

The cake was a huge hit btw and the birthday girl adored it, so I was very pleased about that :D
 
Had a few friends over today so done a slow roast shoulder of pig with, spuds, carrots, shallots, garlic and pears with a chocolate cheesecake for pud.
