How do I remove the chat tab from the bottom of the pages?

You mean the chat bar? Go to chat admin options and change display mode.

Yeah, I changed it to where it only shows up on the chat page, but it still has the chat bar on the other pages.

Make sure that the user chat options doesn't have display mode set to all pages. User options overwrite admin options.

There aren't such options. Chat uses the user group colors you have set for each group.
You can only change your message color if you have the permission.

I asked this same thing (albeit under the test name on Siropu's forums). I'd also love the ability to add custom messages. Ie: "Chilling in chat".

I probably missed it in an earlier post, but is there a way to fine tune the Chat position in the navigation links beyond beginning, middle, and end in ACP options?

Those are the default XF tab positions.
