Food Fantasia

Last Night I made a Tandoori Chicken pizza, it was really yummmy!!!

Topped with fresh chopped mint and Chopped Cashew nuts.. mmmmmmmmmm

Sorry no pic, it didn't last that long!
 
yeah, mint is a great flavour with Indian spices, so worked perfectly with the spicy Tandoori chicken.... but of course you wouldn't put mint on an Italian style pizza :p

OH lol, no, not that sort, the fresh leaf variety :) I was going to put fresh corriander (cilantro) on it too, but I was out of it :(

I also made some carrot cake last night. No pictures because it went missing between coming out of the oven and getting to the fridge :(.

I love carrot cake, haven't had one for years! Might have to make Carrot Cake muffins for the kidlette .. good idea!
 
Do you use oil? I replace oil with chunky apple sauce in most things I bake unless its really required.

Hmmm I have not tried the apple sauce.. worth trying.. I also use low fat plain yoghurt a lot in cakes/muffins in place of butter or oil

I also make some low calorie health bars in which I use steamed mashed (naturally) sweet pumpkin for sweetening and no sugar or oil at all.. those are really yummy!

If it has a nice whipped cream cheese frosting, I just might have to help make it disappear. :giggle:

It actually did have some very nice frosting... which I put on when it was still slightly warm, and it melted a bit unfortunately.. lol no one was complaining though :p
