I'm obsessed with bread making currently, trying to bake the perfect loaf of no knead bread... yesterday's attempt was a heavy multi-grain number, that worked out brilliantly! Crusty on the outside, Moist, dense and full of flavour on the inside, I added Soaked Bourghal (cracked wheat), sunflower seeds, linseed, oats, bran and used Wholemeal and semolina flours.

Very nice healthy loaf of bread!

No Knead bread is just so brilliant, I have made Artisan loaves of - White, Ciabiatta, Rye and now Whole Grain, without kneading a thing and so easy (just need time and patience!) I am in love with this process.

This is great for people who don't like kneading but I love kneading - good way to get my frustrations out and make something productive out of them!! :D

Good for you!!! :D I agree kneading bread is a wonderful thing to do, but it does put people off making their own bread, so this is a good alternative :)

But like you I enjoy kneading, and do so with my pizza dough once a week.

Yeah I think it's a brilliant alternative! :) My best friend's mother bakes a lot of bread but she's old now and it's hard work, so she just uses a breadmaker these days.

But I personally will continue to knead by hand for as long as I'm able. I make 8 loaves of challah in one go every month and freeze them, and homemade pizza dough is the best! :) yum!
 
If either of you ever come to London can you give us a bread making lesson?

We've tried several times and just can't get it right, despite me doing it as a kid 30 years ago on a weekly basis.

I come to London a couple of times a year at least to see old schoolfriends so I'd be happy to. :)

Hey Dragonfly, I just saw your za'atar bread brunch recipe - you've got me drooling lol. I've got some za'atar in my cupboard that I bought in a shuk in Jerusalem a few months ago but haven't done anything with it yet. Might have to give your recipe a try! :)

Hey Jo, let me know what you think :D I love it myself, although I think the Za'atar I currently have is not as nice as home-made, it is still very yummy and different!

Oh I will!! :D Just as soon as I'm well enough to bake bread again (this blasted illness is going on for flipping months!!!) but I'll definitely try it - I had something similar in Israel but on pitta bread, so I'm looking forward to trying this out! :D
