Currently making a loaf of no knead bread from the NYTimes recipe, made one the other day that was just perfect, and so very simple.

Unfortunately this loaf stuck to the cloth at stage two, and pulled apart when I plonked it into the cast iron pot for stage 3 baking.. argh!

Will see what it looks like when it is done, but I suspect it is ruined. :(

Give this a shot, you will be amazed at the results, just make sure to bran/flour your cloth really well at stage 2!!!!!!

I'm obsessed with bread making currently, trying to bake the perfect loaf of no knead bread... yesterday's attempt was a heavy multi-grain number, that worked out brilliantly! Crusty on the outside, Moist, dense and full of flavour on the inside, I added Soaked Bourghal (cracked wheat), sunflower seeds, linseed, oats, bran and used Wholemeal and semolina flours.

Very nice healthy loaf of bread!

No Knead bread is just so brilliant, I have made Artisan loaves of - White, Ciabiatta, Rye and now Whole Grain, without kneading a thing and so easy (just need time and patience!) I am in love with this process.

Soooooooooo.... Christmas Meal, what are you having?

We have decided to go very casual this year, normally I go all out, but I am not in the mood really, and have been very busy working, so don't have a lot of time/motivation to cook like I normally would.

I am going to prepare a largely cold buffet (remember it's Summer here and quite hot) consisting of -

Side of Smoked Salmon
Rare roast rump of beef
Roast Chickens

Potato Salad
Thai salad
Steamed Green Beans
Maple Glazed Roasted Beetroots
Avacado Salad

Crusty Breads

Followed by -

Chocolate Mousse
Fresh Raspberries
French Vanilla Ice Cream

Chocolates and coffee.

Should be good fun and not too much drama on the day, just have to cook the Beef/Chickens and beans/Beets and make the salads - the rest I can pre do on Thursday and Friday!

Anyone else wondering when the left overs from Xmas day are going to be finished :( Finally cooked something new post Xmas, and ironically we now have a plate of leftovers from that meal ... d'uh!
 
Left overs finally finished! lol

Last night I made a ham fried rice with the last usable bits of the ham, the bone I will freeze to make a soup in the Winter.
