Last night's effort - Thai grilled coconut chicken. Delicious.

Yum yums! :D Looks utterly divine!

Thanks to a post from Kim, I am now obsessed with convincing Mrs. Kevin to let me try making these at the house...

Teee hee heee.. sorry about that :p Actually it was all Forsaken's fault, he was telling me about them from that place near him, and when you said bacon.... :p

So let's blame Forsaken!

You're just jealous of all the bacon!

I had a pound of bacon today. :D Funny thing, I have lost weight this month. I also have slightly low blood pressure, that is actually a good thing.

Yea, everything is Forsaken's fault. Why did he make this summer so hot?

Right.. haven't posted in here for an age! :D Time to remedy that!

Here are some health bars I made a while ago.. I know they look like they have missed out the middle man :giggle: But they are actually really good.. and really good for you! Made with mashed pumpkin as the only sweetener and no fat, only good things like nuts, seeds, dried fruit and whole grains. I cut them so there is only 100 cals per bar, so they are a great snack.

Awesome can i get Recipe for this one :p Will give it a try :)

Sure :)

Here is the basic pizza dough recipe that I make every Friday :D

http://www.masalamojo.com/?p=123

to make the Tandoori Chicken version... This makes a 400mm pizza that you can cut into 12 slices, scale down if you want less :)

NB - I used a pre-made Tandoori paste for this version for speediness, but of course you can make your own Tandoori spice mix ;)

1 Chicken Breast (or two thighs if you prefer - marinated in Tandoori paste/yoghurt/lemon juice for at least 4 hours - then blasted in a hot oven until just cooked.
1 tomato chopped roughly

1 cup Sweet potato or pumpkin chunks steamed so they are just cooked

1/2 Red Onion chopped

1/2 cup or so of tomato puree mixed with a tablespoon of the Tandoori paste.

large handful of mozzarella cheese

To top the pizza..

Chopped Corriander leaves, chopped mint leaves, chopped cashew nuts, plain yoghurt.

Method

Pre-heat oven to the highest setting - at least 250°C 500F

Roll a ball of dough about the size of a softball out thinly and put on your greased pizza tray, spread the Tomato puree/tandoori paste mixture evenly over the pizza base, then evenly spread half the cheese over the pizza base (this gives a good base for your toppings) Then arrange your bits of Tandoori Chicken, pumpkin, onion and tomato however it pleases you... top with the remaining Cheese.

Bake in your super hot oven for about 10 minutes ( keep an eye on it, my oven is really crap and might take longer/less time than yours )

When the pizza is done to your own taste, whip it out and drizzle the yoghurt over the top, then sprinkle with the fresh herbs and finally the chopped cashews - cut it up.. and EAT it :D

here is a little gif that shows how to put it together, this one is cajun chicken, but it is exactly the same process :)

Please let me know how it goes :D

Recently I did a Barista Course at my local TAFE college - it was so much fun, and I got to drink wayyyyy too much coffee...

So now I am officially qualified to make you a superb cup of coffee! :D

What's your order?

Cappucino
Latte
Flat White
Espresso
Long Black
Macchiato
Hot Chocolate

And.. in what I thought was a hysterical side note.. I was just telling someone from here about it.. and about how difficult one particular coffee is to get just right.....

....and they totally started wee weeing themselves laughing about something I totally innocently said....

....not sure why???

[10:33:39 AM] Kim Ritchie: Long black is the hardest
[10:33:51 AM] Ant: LOL
[10:33:52 AM] Kim Ritchie: very hard to keep the crema on the top of a long black
[10:33:53 AM] Ant: I am resisting
[10:34:20 AM] Ant: i am laughing so fricken hard right now
[10:34:20 AM] Kim Ritchie: OMG hahaha
