XF 1.5 See when a user changes password?

Is there a way an admin can see when this happens? Or a work around? See the email sent to a user confirming the change in our sent items or logs?

It's logged in the user change log.

When editing the user in the Admin CP, click the "Change Log" tab. If the user has changed their password it will be listed there.
