I am interested in both iO and iO dark, is there anyway to make them use the style variations so that users don't have to switch between Light and Dark mode manually.

Unfortunately, at this time, no; We may support variations with UIX and AC.UI later, but have no current plans to rebuild themes like iO to utilize variations. One key reason is that a number of color functions that iO relies on don't work well within variations, being significantly buggy.
