I wanted to know if it will be possible to change the height of the navbar depending on if we scroll-down or not. I tried it with basic UI.X and it's not very convincing (it appears to be sticky when you don't have any margin-top, maybe a bug I don't know).

I already asked you it on the UI.X thread but it would be more suited here I guess Is something like that doable with Intrinsic? -> http://tympanus.net/Development/HeaderEffects/ Also, will it be possible to move every tabs to the right to have them not sticky to the logo like above? I already have ideas with Intrinsic and if it's easy to do, it will be so awesome =D

Yes you could always modify the height. Intrinsic has an animation in it.
