Ricotta Cheesecake

3 lbs ricotta
1.5 cups sugar
8 large eggs
1 tbs lemon zest
1 tbs orange zest
2 tsp vanilla extract
1/3 cup cornstarch

Preheat oven to 350 deg F.

Butter a 9" spring form pan. Dust w/flour and tap out. Place pan on a 12" square of heavy aluminum foil. Mold foil around pan tightly so water can not seep in.

Puree the ricotta until very smooth. Pour the ricotta into a large bowl and add eggs, vanilla, and zests whisking until well blended.

Stir together the sugar and cornstarch. Add to the ricotta mixture until smooth.

Pour batter into prepared pan. Place pan in a large roasting pan and place in middle of oven. Carefully pour hot water to come to a depth of 1 inch into the roasting pan. Bale for 1.5 hours or until the top of cheesecake is golden and a knife inserted 2 inches from center of the cake comes out clean.

Turn off oven, propping oven door open with a wooden spoon. Let cake cool for 30 minutes in the turned off oven.

Remove cake from oven and roasting pan, remove foil and continue to cool on a wire rack until room tempurature.

Serve at room temperature or slightly chilled.

Oh YUM!!! I love banana bread! :) The muffins look good too - banana cake is good with sultanas and walnuts in! :)

Yeah they are pretty yummy! lol I made them high fibre with oat bran and bran, so I am not feeling too guilty about having a few of the muffins :p hehehe



Ricotta Cheesecake



Yum!!! That looks fantastic Rob, and nicely low fat with the ricotta instead of cream cheese! I would have to omit the orange (hubby has an orange alergy) but I will give this a go, as cheesecake is hugely popular in this house, I have made ricotta cheesecake before, but always love getting new recipes to try!!! :D
 
That does look like an awesome cheesecake, and Dragonfly, your prawns look scrumptious! Tonight is an old favorite - meatloaf with baked potatoes and broccoli. Must have an iron deficiency because I'm eating all things with iron! I sneak lots of veggies in to the meatloaf which keeps it moist and healthy and the kids don't know. They always say it's the 'best meatloaf ever' though what they have to compare it to, I do not know. Still, nice to hear from an 8- and 9-year-old.

I could actually just eat that right now lol. I'm still trying to decide what to do for dinner (yes I know it's nearly 2 in the morning lol)... but nothing is appealing. Too bad I don't have chicken or noodles right now.

Sounds like you could do onion with garlic black bean sauce... Though that might not be entirely fulfilling.

Thanks for that! I was on cheesecake tear a few years ago. Musta made fifty of them that year! Never used corn starch, I'll have to try that, thanks. I've played with all of the suitable cheeses, cream cheese, ricotta cheese, farmer cheese and cottage cheese. My favorite used smooth-blended cottage cheese and sour cream. Later I started adding large curd cottage cheese. I'd rinse a cup of cheese and fold it in last. Kinda like the added texture and contrast.

Anyway, thanks and I'll probably get out my spring-pan again.

I want to find a local farmer that makes the ricotta fresh. There is more flavor to it than any of the store brands. Let me know how it turns out.
 
Our Friday Night pizza was Smoked Salmon, Prawn and Brie, with a touch of basil....MMMM scrummy!

On Sunday I had some pizza dough left over (yes it keeps for a few days in the fridge) so I made a potato and rosemary pizza... it is meant to be a gourmet classic, but it left me pretty underwhelmed I have to say... nice enough, but not something I would rush to do again...

I took both of these and combined them into 1 pizza. I split it in half. It was very tasty. I'll post pics.

Basically, I used rosemary, instead of basic, and spread it across both halves. I also used mature cheddar cheese instead of Brie. Again, it was scrumptious. I was surreptitiously eating it. Simple delicious.
 
I decided to make a Spanish omlette...
That looks delicious. Nicely done! Great inspiration, because now I will end up googling all evening to find all different sorts and figuring out which ones I might want to try.

Unfortunately, I became very peckish when I could smell the delicious food from the oven. I've got a bit of them left.

LOL yeah sometimes ours don't make it to being photographed, they get eaten before I remember! :p That looks great Shamil! Half and half is a great idea for the variety! :)

Tonight we had a tasty but simple dinner - Nice free Range Chicken roasted with Walnut/mushroom/herb stuffing (cooked separately) and Roast spuds , steamed veggies, and gravy... mmmmm it was very yummy.

I should have made a lucious sexy dessert, it being Valentine's Day, but I didn't think of it until it was too late :p
