Could you please post or PM me the recipe to the mashed potatoes?
Very easy really - boil some peeled and chopped maris piper potatoes until the edges are just starting to break, then drain the water, season with sea salt and black pepper, grate the zest of a lemon onto the potatoes and then fold in some creme fraiche with a metal spoon, lightly crushing the potatoes as you do so.
 
No squeeze of lemon? I found a slightly similar recipe earlier that used fresh lime peel, bit of lime juice, and fresh chopped cilantro. A spin-off of cilantro-lime pilaf. Thanks for the recipe, Kier, cheers.

Simple Minestrone soup from the can, I would make it from fresh but I have no idea how.

I thought I would make a batch of Chocolate cupcakes as a trial for a potential Christmas day dessert (to be served with raspberries, hot chocolate fudge sauce and very good quality vanilla ice cream.

They turned out absolutely delicious, but interestingly they all overflowed these paper cups which I have never used before, so I am not sure if I just overfilled them or the paper cups themselves have some qualities that cause this, will have to experiment more.

Anyone want a chocolate cupcake?

Currently making a loaf of no knead bread from the NYTimes recipe, made one the other day that was just perfect, and so very simple.

Unfortunately this loaf stuck to the cloth at stage two, and pulled apart when I plonked it into the cast iron pot for stage 3 baking.. argh!

Will see what it looks like when it is done, but I suspect it is ruined. :(

Give this a shot, you will be amazed at the results, just make sure to bran/flour your cloth really well at stage 2!!!!!!
