Well helllooooo again dear thread,

I have spent most of this year training to be a pastry chef, which as been great fun, I still have half of next year to go, then I might do a specalisation after that, not sure yet.

Last week was the final assessment for the pastry section, which was a huge day, (think of a Masterchef challege but with lots of different products and lots of them!) I passed thankfully, I wasn't happy with all my products, my choux pastry was rubbish on the day, after being brilliant all year LOL.. and I only just made the time limit by 10 minutes after 6 hours of slaving away! lol So happy that is over!!!

On to Continental cakes next year (woo hoo!)

Here are some pics of the final day, I didn't take a lot of photos, as I was totally and utterly smashed, and they had to be boxed up to be sold anyway, so I didn't get time to photograph all the things we had to make.

I was actually thinking of the continent of Australia, so "Australian Continental Cakes" :unsure:

We have some pretty awesome Patissiers in this country now days, but we still predominantly make European style cakes and patisseries, But then you guys invented them all before we existed :p Dang you! lol

There is still room for invention and reinterpretation of course.

The Australian team recently won the Asia Pastry cup, which qualifies them for the Coupe Du Monde de la patisserie in Lyon in January 2013 ... I hope they win!!!

We call it shaved snow :D

Below is a Mango Shaved Snow, with Mango Chunks, Condensed Milk and Mochi :)


Below we have a regular shaved snow with strawberries, mangos and condensed milk :)

Golly, Those look interesting! Not sure I would like the condensed milk tbh, I find that stuff very sweet and cloying, but the fruit and ice (sorbet?) sounds divine!

LOL yes it is an occupational hazard for me now >_< Mind you I am on a diet and have lost a bit lately, which is great!

I just noticed a lot of the photos I had linked early in this thread are now dead, so I will try to upload and replace them instead.
 
Not long ago I did a professional Chocolate Masterclass, with one of the countries top Patissiers/Chocolatier which was awesome! I have wanted to get some of the professional chocolate moulds since and test out my new found skills, and finally got around to it ordering some from interstate Wednesday this week. Much to my surprise they turned up today (Friday) So of course...

I had to take one for a test drive straight away!!! :D

Chocolate.. it's a messy business... but oh.. oh so very worth it!! :D

These little devils are Salted Caramel inside, and Belgium Couverture Chocolate on the outside.

Tomorrow I am going to try out the heart shaped mould with Chilli Chocolate Ganache centres.

They will all be boxed up and given as Christmas gifts (if they survive) :sneaky:

Edit - first time using the new Camera for food too :D Very happy with it, these were shot after dark with ambient light, and one small lamp filtered behind them, no flash at all.
 
I absolutely have no fantasia. I eat what God gives. Yesterday, he gave me the sturgeon and pink salmon caviar sandwiches. It was a fish day :D
