I've just purchased XFES, installed it in my XF Admin Panel, but how do I go about configuring it correctly. It's the first time I've used it and I like my toys...

They installed it, but it fails to start. They said this.

You should download the log and submit it to Elastic for trouble shooting.

AlmaLinux OS 9

Do you have any plan add support for AlmaLinux OS 9? Can not install Elasticsearch in AlmaLinux OS 9 because RPM signing key is invalid. rpm --import https://artifacts.elastic.co/GPG-KEY-elasticsearch warning: Signature not supported. Hash algorithm SHA1 not available.

BTW, never asked but this question has nothing to do with installing ES. Why are you not testing this in XF 2.2.15 since it is stable and not beta?

Think I'm going to give up as a bad job, how do I go about uninstalling ES 8.x.x and all its prerequisite installs?

Update:
I would not recommend Namecheap for hosting, Registrar - yes, hosting - no.
After a conversation with @Mister.T I checked out his VPS. 30 min. later ES was installed & running. There were other glaring non ES problems also. Pathetic support..
