Can I just disable a node? We have sub-forums with about 20 members (set by permissions) in them. I want to close them. But deleting them removes them altogether. I might want to turn them back on later.

If you want them to effectively not exist properly, then you'd want to use permissions to hide them. Remove all of the custom permissions and then tag the node as private.
If you can tolerate them potentially being found (such as via search) but otherwise not being listed, you can disable the "Display in the node list" option.
