Why would it be tricky to restore?

If you have to restore your site for any reason, you simply upload the backed up files to the server and import the database.

You can view the *.data files if you wish - they can be opened with any image processing program.
 
But they are not organized in categories/albums like on the XF
It doesn't matter. That information is stored in the database.

For reference, I believe this explanation from Brogan explains why attachments are stored as .data.

The /data/attachments directory is for the thumbnails.
The /internal_data/attachments directory is for the original images. This directory is php protected which enables the contents to be restricted to certain groups/users using the permission: View attachments to posts.

You can't do a partial restore of a site anyway so it doesn't matter.

When restoring a site, you have to ensure the files and database are in synch and that means there is no requirement (nor is it possible) to selectively restore files.
