This isn't my site, so apologies if this has been fixed in 2.0.1. I did a quick search here but could not find any mention of this issue.
I encountered an issue when editing categories; prefix options are not loaded if you did not choose a prefix when saving the category.
Step 1: Associate a thread prefix with a forum.
Step 2: Add or edit a category, and pick this forum for the "Automatically create thread in forum" option, but do not choose a prefix.
Step 3: Edit this category again - the "Automatically created thread prefix" option will only contain the "(None)" option until you select a different forum then select the original forum from step 2 again.
