Right now... Dolphin HD. Best browser I've used so far. It has a lot of features but I'm just glad it has multiple tab browsing.

I use BSPlayer works for video. It took me alot of searching but this was the best i found so far.

I use eManga to read manga on the phone. Mangasearcher works good too.

Only games I got working so far is Angry Birds, Need for Speed Hot Pursuit, GTA 3 10-Year Anniversary and Sonic 4. It's gonna take me awhile to get used to touch screen controls though. I wish I had buttons.

Amazingly this isn't just a list of everything I have installed :p

    AdFree
Chrome (can't believe stock ICS webkit has no reflow.. text zoom in this just as good though)
    ConnectBot (very handy ssh client)
    CoPilot Live
Easy Voice Recorder (surprising how few offer full pcm recording for free)
ES File Explorer (free and same ability as root explorer these days)
    Go Launcher EX
    Google Reader
    Hacker's Keyboard
    IP Webcam
    K-9 Mail
    Memo Pad
    MX Player (unrivalled video player)
    Perfect Viewer (manga viewer)
    PocketCloud (windows rdp client)
    Poweramp (music player)
    Prey
QuickSSHd (so much easier than ADB for simple things)
Screen Filter (saves my eyes when using my phone in complete darkness)
    SoundHound
Spirit (pretty much the only game I would normally pick up and play)
    Tapatalk
    Timeriffic (Tasker but free)
    Titanium Backup
Wallpaper Changer (beats having a static one and getting bored of it :p )

Pity it's so slow to work with large text conversations (or maybe it's just my phones wifi having unbelievably bad ping as usual)
