Can an item have attributes such as colors?
Is there a way to set inventory so you don't over sell?

You mean like different colors selectable ?
You could achieve that through the custom order fields.

There is an inventory management yes and you can allow or not to oversell.
Otherwise, if your goal was to have that for the different colors as per my answer above the quantity will not be managed per color if done through the fields.

Not sure I was 100% clear but please let me know if not.
