Thank you for reporting this issue, it has now been resolved. We are aiming to include any changes that have been made in a future XF release (2.1.8).

Change log:

Ensure that emoji conversions are done as expected for all characters.

There may be a delay before changes are rolled out to the XenForo Community.

It now saves and resaves correctly but you still see the wrong/different one in preview, edit, and quote.
EDIT: The above only happens in editor code mode.

I imagine that's pretty much as expected. As it's simply plain text, it doesn't get normalized into the corresponding EmojiOne image, so it's just down to whatever emoji font is available on your OS.
