lot's of 'invalid' citations around emails. is this by design?

It is by design, yes.

Users wouldn't generally appreciate us outputting their real email addresses, but the author field in that format is required in the RSS spec.

How about a setting for the RSS output email in the admin panel? This would let us forum owners use the forum's email or whatever they wanted to set it to ( noreply@someforum.com etc).

It's just simply a way to satisfy the requirement. Having a real email address there would make no difference to anything. I'm not entirely convinced there are many RSS readers that would display or otherwise use that information, and if they did, I'm not sure how many people would actually use it to email you.

I display RSS feeds from my forum on my wiki and it displays the email in it and I would strongly prefer that it showed an email from my domain.
