So google aren't going to turn around and let people know how this works, they might not have to.
I have always personal thought it has something to do with mouse movement, keypress, key touch, but most of the time, it might be simpler than that.
This article explains it might have something to do with cookie white listing based on previous captcha attempts:

That's interesting, this might be why browser based bots have more success against ReCaptcha - NoCaptcha than non browser based bots
