Back up your data frequently, to somewhere else besides your own server. Another server, your own home computer, etc.

Our server is setup to backup the database daily and we manually download it (my co-admin and myself both do) daily, then on saturday we upload it to a file host like Rapidshare or MegaUpload. So not only do we, the admins, each have daily downloads, but we have it remotely upload in case there is a huge freakishly accident that we both lost the backup, we still have a weekly backup rely on.
