What CentOS version should i choose?

I would pick 6.5 because it is stable... 7.0 is too new and when it comes to OS it is not always a good idea to use the latest version! I suggest you to install the Minimal version and then manually install Apache, MySQL and so using "yum install..."

If you have 4GB of RAM or more then you should go with the 64-bits version.

I prefer to use Apache as base and then nginx over it as a reverse-proxy system for images only. I also prefer to install and configure the software manually so suit my needs and have complete control over what is installed. Haven't used Centminmod ever so I can't vouch for it...

For stability, I'd too stick with CentOS 6.5 unless you want bleeding edge - there's definitely kernel, TCP and disk performance in CentOS 7.0 but even I am only scratching the surface of what has changed under the hood for CentOS 7.0 - quite a few changes i.e. https://community.centminmod.com/threads/work-log-for-dealing-with-centos-7-0-changes-systemd.738/

I've still not used CentOS7 yet :(
slacker, spin up a VPS on your promox server - Centmin Mod .08 beta needs more testing :D

edit: oh and with online.net be careful they're known to give almost failing hard drives in their servers and there's long delays in getting them replaced

i see a PVE 3.10 kernel listed there ??

what kind of CSF troubles on CentOS7/Plesk ? no problems so far for me with Centmin Mod once i properly disabled firewalld first
