Tags are controlled by the "Chips" style properties (yes I know, it's not obvious, it would be helpful if when you searched for "tag" in the ACP it found these). Anyway, use the ACP search for "chips" to locate them, then you can change the colours as desired.

Apologies, I misread and thought you wanted to change the colour of tags in threads.

That tag edit box etc is controlled by your custom style. That particular thing is the Form Input - focused style property (which you can search for). You should be able to change the background colour or maybe the text so you can then read it. However this will affect other form input boxes across your site. You might want to ask the style author about this in case there's a better way to do it.
