XF 2.2 Step by step guide for template modification?

Is there any step by step guide regarding template modification? Like how to create your own custom theme, how to preview it, where the files should be added, etc...

It seems like it's not mentioned in the documentation. For example, we wanted to show the posts/thread count and the number of members. We saw these from one of the XML files {$forumStatistics.threads|number} and {$forumStatistics.users|number} but when we added it using an HTML widget it didn't show.

We tried {$xf.visitor.username} and it's working. Is there a list of available variables we can use in the template and list of available filters?
