How do I find out how many users were on our forum on a day in the past?

You can get the active users for a specific day via ACP -> Tools -> Statistics -> Daily Statistics.

Hmm that says 200 but our most users online on front end says 800?

You would have to enquire in the add-on thread how they are counting users online.
