Food Fantasia

Haven't had many REALLY good meals in a while (kitchen's torn apart for remodeling), but one of our favorite throw-togethers so far was a rice/chicken casserole made with leftover grilled chicken chopped into chunks, cooked jasmine rice, some shredded cheddar, an egg, a bit of sour cream, chopped onion, salt, pepper, cumin, chili powder (I think that's it) with some buttered bread crumbs on top. Just mixed it all up, spread it in the casserole dish and popped it in the toaster oven for about 15 minutes. YUM!

Trying to decide what the first meal in the new kitchen will be... :D


yeah it's hard when you are having your kitchen done I know :D That sounds good Susan, must try that next time I happen to have all those bits handy :)
 
When I get my new place, I'm having the outdoor kitchen done first (I usually cook out there anyways), that way I can continue to do whatever I need to while the interior is being redone.

Go for Ricotta gnocchi next time, it's lighter and a bit more flavorful.
 
nah, that's an ingredient for cannoli, stuffed shells and ricotta pie :-)

But yeah this is simple, cheap and filling and is the point of the peasant food side of Italy.
 
Gnocchi di Ricotta is an actual Italian dish, so I wouldn't knock it before trying it. I don't think it's considered peasant food, I've never seen it labeled as such. I believe you reside somewhere in Italy, so it may be a local thing? As far as I know on my lengthy sessions on food research, the Creme de la Creme of peasant food in Italy is Polenta. A dish which I neither like or find palatable.

No not in Italy, just love my heritage and my family immigrated from there. Gnocchi IS peasant food, ricott is not. It's about price and availability, potatoes and flour are everywhere and only needing 2-3 eggs for 5 pounds is stretching it. Yes polenta is cheap but you need to like it to eat it. I do not enjoy it either...which is why I posted something simple people can cook themselves. Ask anyone who wasn't taught how hard it is to work the dough properly in the first place then add the fact of mixing a creaminess into it....

Also I don't eat any condiments...at all. none. So my taste likes plain. When I eat a steak I want to taste beef, not A1 sauce...same goes for pasta..gnocchi was invented as a potato dumpling pasta and as a personal thing thats all I generally make.

I showed the basic...how you flavor it is your expression of taste. I am not against your said dish...it just wasn't my point to get to the more elegant options available but rather the core basics. In fact I like that dish you posted and have tried it (understatement).

Remember every ingredient you add changes the method, ingredient amounts, and consistency of the dough...all SUPER important things to worry about while your not overworking the dough

I had my first gnoochi in Siena many years ago (best holiday ever, Italy is a very beautiful country) :) And of course the food is great too :D
 
Had some left over mince from last nights burgers so decided to make chilli tonight.

I didn't end up eating last night, was absolutely knackered after not sleeping for days, so went to bed at about 7 or something :p unfortunately I woke up about 11.. but still 4 hours is enough!

Jeff was going to cook me a salmon steak too.. I hope they will be fine for tonight... mmm salmon..
