can I adjust the size of the photo when embedding from instagram to make it fill out the page a little more.

Most BB code media site embeds will be width restricted in some way which makes them significantly less obtrusive when used in other contexts, such as posts.

You may be able to modify the embed HTML by modifying the BB code media site definition in the Admin CP.
