Unless RM has been updated, you can't disable the version string... or maybe I'm an idiot and have been misreading posts.

You can't disable the tag line either, however you are able to set the Resource Type option in each individual Resource Category. So if you go to your admin panel and select 'Resource Categories' from the Applications area, then click on the one you want to change - you'll see the options there.
