XF 2.1 Custom User Fields

Just migrated a vB forum to xenForo, I have some questions about custom user fields, thanks for any help!

1. If a user misses required custom user fields, does xenForo force the user to fill those fields at some point? What happens to users who registered with FB accounts?

2. Assume a custom user field:
OS version: Win 10
If I want to change "OS version" to a windows icon when display in "message user info" , do I have to display it manually by customizing the template?

BTW, it's a great pity that choice fields can't be changed later, it makes it much less useful.
