I wish to customise the emails that are sent by XF to members, i.e. those when they register and they must click on a link and so on.

Are they phrases or templates or....?

They're phrases.

Admin > Appearance > Search Phrases and enter "email", you'll see pretty much all of them.

Phrases:

Admin CP -> Appearance -> Search Phrases

Basically just search for a part of the email text you want to change.
