I don't really grasp the dotdeb and such - I am guessing I must have installed it at some point for ffmpeg video support?
Not sure, why this is being used if I am honest and it'#s proving tough to remove and install the php5 libraries.

DotDeb is being used for the latest (or should be) PHP versions typically. Due to the fact that you get the latest, sometimes you don't get all the same modules and may end up in losing some due to them not being in existence at the time you upgrade. That's why I asked for your sources.list and the PHP version currently installed.
