Any IT Guys/Girls Here?

Uh... how about simply installing VirtualBox, pick your flavor of Linux ice cream, and set up that way. That's what I did before I got my servers here at the house - and was able to duplicate the OS and environment that I was working on for the forum.
VirtualBox also allows me to run Windows 7 on my Mac without having to switch to bootcamp right?
 
Get a big networkable b&w laser printer as the work horse for the office- if they need color they can go to Kinkos. If there is money in the budget then go color laser. Stay away from inkjets at all costs.
What do you think of HP Officejet Pro X? It's not an inkjet or laser printer but an officejet that has ink and is supposed to be faster and cheaper than a laser printer. http://www.cdw.com/content/brands/hp/officejet-pro-x.aspx

Anything that's not laser is inkjet whether they call it inkjet, deskjet, officejet, etc. HP just makes up names they can trademark. The only other two printing technologies are dot matrix (think 1988) and thermal transfer, neither of which you want or will likely find.
