I mean to set up in the sitemap just the links that I want.

Deactivate automatic sitemap creation in the ACP.

Manually create your own and upload it to the server.

Note that Google will still find and may well index the pages not in your custom sitemap, unless you somehow specifically noindex them.

It seems a bit if a wasted effort to do this unless you have some other reason for excluding pages from a sitemap
