We shouldn't update/test the live server directly so we should have a copy of test server and have things doing there first. After everything looks fine, we make the changes to live server accordingly by certain method.
So how are these two server installed and "synced"? I remember there's a tutorial about this topic by @Paul B before but can't find it.
