On the email that gets sent out showing people what's been happening while they've been away, the email heading looks like this…


However, on our homepage, the header looks like this…


Where's the option to change the background for the emails?

Could it be your site offers several styles for members to choose from? If so, you could set the email style as follows: AdminCP -> Options -> Appearance -> Default email style

Unfortunately, I changed that setting and sent a test, but I’m still getting the wrong colour on the email header background.

I might be dependent on your chosen forum style (as a user through your preferences).

This is driven by the "Page chrome background color" style property, which is the color that, by default, also controls the area you've pointed to on the front end. I'm not sure if you've just changed a more specific property instead of changing the "basic" color instead (which can be used more generally).
