MG 2.3 latest image from media gallery category

I'm thinking of doing a custom html navigation tree at the top of the Media Gallery homepage.

Is there a way to pull the latest image from a specific Media Gallery category and include it on the Media Gallery homepage.

What I'm thinking about is featuring a few of my main categories at the top of the media gallery homepage such as:
Featured Category 1 [ latest image ] | Featured Category 5 [ latest image ] | Featured Category 10 [ latest image ]
