Is there a way to post a copy of rejection notices for applicants to the Admins?

We have an application process that moderates new applicants. When an Admin denies a request, I use AWS SES to send an email to the person applying with either information as to whether they have an incomplete application or that they are rejected.

Is there any way to create some sort of record of those rejection notices, or is it already in a log somewhere that I don't know about?

Assuming you're using the built-in rejection functionality, Control panel > Logs > Rejected user log
