XF 2.1 How do I find all phrases used in emails?

Hi, I´m currently translating all user facing language phrases before an upcoming launch of ver 2.1. I´m almost done. Working on some e-mail phrases at the moment. If I search phrases with "html", will I find all phrases that can go out to a user in an email?

No.

There are no separate phrases for emails. Emails use same phrases, so if you translate all phrases in admin panel, emails will be translated too. You can take a look in email templates for used phrases.
