I'm wondering if there's an option when an user is allowed to edit its own post for x minutes after he posts it. As of right now, the timer is unlimited and if there's an option, i didn't find it hehe

    It's in the permissions.

Time limit on editing/deleting own posts (minutes):

Set a value in the field.

Does this time limit to edit your own post reset each time user edits the post or is it X amount of time from the post/thread creation time?

    The latter.

I searched for the answer, but didn't find it (or didn't recognize it). Does the edit time limit start when I begin typing in the text box, or when I click "Post Reply"?

From the post date time, i.e. after it has been posted.
