when quoting the responses on how to disable the notification email

There aren't any email notifications sent for just quoted posts, there is an alert only for this. Emails notifications are sent for things listed in https://xenforo.com/community/account/preferences and when watching a thread (if you choose to have email notifications).

If you are getting notifications for just quotes then that would be from an add-on.
