Thinking of updating ver 2.0.4 to latest version. Aside from possible issues with 3rd party plug ins, are there any hurdles I should be aware of?

Just the general ones - third party add-ons and styles will need updating to compatible versions.
You will need to check with the authors.
While we will upgrade the XF software as part of the service, we won't do anything with the third party software, so you would have to upgrade those yourself.

I might wait until after the first of the year when I have more time to spend fixing any issues.
Also, is there a way to safely revert if the new upgrade isn't compatible with our current set up? There is at least one 3rd party add on that we have to have. Sure I will see if it says it's compatible, but I'd like to have the option of downgrading off a back up without issue if need be.

Only by restoring from a backup.
Set up a test installation and test the upgrade there first.
