What are your favorite and/or essential Mac apps? I'll kick-off:

1Password - use complex passwords everywhere and store them in a safe database for quick & easy use
Adobe Creative Suite - essential package for web designers
Aperture - intuitive way of photo editing and management
AppCleaner - thoroughly uninstall apps - free
Caffeine - keep you Mac awake when viewing video (prevent screensaver from showing for a while) - free
ClamXav - virus checker - free
Cyberduck - the best FTP app for Mac IMO - free
DiskWarrior - restores hard disk directories. When you need it, you'll be happy you got it
EyeTV - watch cable & some digital TV on you Mac while doing other work
GrandPerspective - graphically shows the disk usage on your Mac - free
GrandTotal - the best easy to use invoice app I could find, really happy with it
iTweaX - reveal some usefull hidden features and maintenance tools for Mac OS X - free
JellyfiSSH - simple bookmark manager for connecting to *NIX boxes like BSD/Linux etc via Telnet or SSH 1 or 2. - free
MacPAR deLuxe - checks, restores & unpacks newsgroup downloaded binary files. - free
Microsoft Office 2011 - the only MS product I still like to use on Mac
Mkvtoolnix - create, alter and inspect Matroska files - free
SABnzbd - Easy to use, time saving usenet downloader - free
SubFix - very simple and easy to use SRT/subtitle file synchronizer - free
TextWrangler - text editor with many features - free
Things - awesome task management app that I wouldn't want to miss
UnRarX - expand rar archives and restore corrupted or missing archives using par2. - free
VLC - media player that plays just about anything - free

Must have Monolingual(removes all unused languages, they waste a surprising ammount of space at least on the systems I worked on) unless of course you installed the o.s. yourself, and selected your native language.

Main Menu has some nice features as well.

Check out Sophos AntiVirus Mac Home Edition... It's free, and while they aren't well know outside of the corporate world Sophos is one of the best.
