Is there a resource or add-on that would help remove old graphics? They're taking up space on the server.

Are you looking for attachments, media gallery, or showcase? Attachments can be found in Content>Attachments. You have to do them one by one if I remember right. Media gallery is Media> look for Batch Media and click on Media or albums. I would have to look at Showcase as I don't remember off the top of my head what to do. 
i would not recommend deleting old content.
perhaps if you have a funny picture thread from 10years ago, sure, kill it. but on-topic things, don't do it. your future self will thank you.
convert to webp with xf2.3 optimizer. (built in)
throw the attachments on a bucket for cheap. (just need to set up the bucket and add a few entries to config file, and then bulk move them with a simple command line)
