One folder each time you edit the template and some user triggers a cache renew. You edited a little too much recently but in practice, people don't do that too much. You can change the cron entry yourself. But that will be reset every update though.Maybe you can add an option on admin settings for us to change how many days to clean up?

Did you clean up the files manually?I'm getting lot's of server errors.... But in CPanel when I check the error log.

Better to do that with nginx/Apache module. PHP can't beat native code with that kind of stuff.What about minifying the html source output itself?
